Been asked to film indoors-a swimming pool no less!

Height of roof is 30 ft or so doable?

Anyone done it?

Pitfalls?

So long as you're confident yes that sounds very do able.
One bit of advice I would say though would be to turn off the optical flow sensors (vision position system) if your flying directly over the water as the sensors can cause the aircraft to behave oddly due to the moving water and the ultra sonic waves being reflected in different directions etc. Back to old school atti mode!

Would you need to turn of VPS if you were above 15 feet off the water?

I would, because even though in theory it would be ineffective at that height, why risk having it on... If it was a different case where you were flying way above the water (e.g. 50ft) then i'd have no concern about keeping it on.
