How are you supposed to turn the gimbal sideways on the I2? I tried tapping and holding but it only goes up and down...

Viper is right.
Option 1 (what you were trying to do):
1. Select free mode on the left side of the go 4 app
2. Tap and hold until blue circle appears
3. Drag to where you want to look

Option 2:
1: hold c1 (left) button
2: Slide left wheel

I am unsure if you guys have an Inspire 2 and use DJI Go 4.
I can report that only holding C1 and sliding the left wheel works.
By default, the mode is already on Quick, and on Quick I can only move the gimbal up and down (tapping long on screen, blue circle appears). In the other mode, nothing at all moves.

Moreover, it is not possible to set C2 to toggle free and follow. Only C1 can do that, but I need that one on "advanced camera settings", otherwise I can't pan the camera left and right.
It seems C1 and C2 all have different options, and you can't interchange them.

See attached files. Or maybe I'm doing something wrong?

Another question (see last screenshot): how can I force the gimbal to stop at -90 degrees and not go to -130 as it does by default?

C1 + left wheel changes pitch of fpv cam
Left wheel changes pitch of payload cam
In Free mode, left wheel + C2 pans/yaws the payload cam
In follow mode, it simply changes pitch.

You should be able to change between free-follow by giving a long press of the C2 button... but it also has a third mode which is Reset (recentres yaw of payload cam, but not pitch).

I've found the long C2 press to change modes a bit unpredictable as to how well it works - best way to check which mode the gimbal is in is to look at the green icon on the left of the DJI go screen. You can also use that same icon to toggle the different modes.

From memory, the Pattern is follow->free->reset->follow... repeat.
